A Taste of Ye Olde Cookbook
Thanks to all who generously shared their favorite recipes with us. Ye Olde Cookbook has 830 recipes, including many for wild game and other pioneer/forager recipes. One favorite Halloween recipe is for this Frog Eye Salad, from Lorraine Potter of St Mary's, Gardiner.
************** Frog Eye Salad
1 1/3 c bead pasta "acini pepe" (coucous may be substituted) 1(20-0z) can pineapple chunks, juice reserved 1 3/4 c milk 1/4 c sugar 1 (3-oz) pkg instant vanilla pudding 1 (8-oz) can crushed pineapple, drained 2 (11-oz) cans mandarin oranges, drained 2 c whipped topping 3 c miniature marshmallows 1 c shredded coconut (optional)
Cook pasta 11 minutes, as directed on package; drain, rinse well, and cool. In large bowl, mix 1/4 cup reserved pineapple juice, milk, sugar and pudding mix; beat for 2 minutes. Gently stir in pasta, pineapple, oranges, whipped topping, marshmallows and coconut. Refrigerate at least 5 hours. Serves 12.
